Broccoli & Goji Berry

Inspiration for this salad came because funnily enough I didn't particularly like eating raw broccoli, but knowing how healing it is, it was time to develop a better relationship with this living mini-tree like food!

Broccoli is such an amazing vegetable with the power to squish cancer, heal eyesight (even in old age), lower cholesterol, improve blood pressure and kidney function, loaded with antioxidant and the list goes on. We must eat more broccoli :)

What you need & What to do!

Apart from the ingredients all you'll need is a sharp knife and a food processor.

A head of broccoli - chop into inch pieces
1 red onion - chopped into quarters
Pop in food processor for about 30 seconds until grain like consistency, you dont want it to turn creamy.
Transfer to bowl.

2 Handfuls of fresh herbs of your choice
Half cup walnuts or any nut of your choice.
Process for about 5-10 seconds, you want the walnuts to give the salad crunch so small chunks is best.
Add to bowl

1 ripe avocado
Chop by hand
Add to bowl

Handful of raisins or chopped dates
Half cup of mixed seeds, pumpkin, sesame, sunflower, linseed
Handful of soaked goji berries
Half lemon squeezed on top
Pink himalayan salt to taste

Mix it all up by hand

Now customize your Broccoli salad by adding anything else you fancy i.e chilli, apple, celery!

  1. This salad is the BOMB! I sat it all on a bed of spinach leaves, added cayenne pepper and olive oil and am blown away! For the herbs I used coriander and basil! WOW! Thank you for sharing!!!
